“Doge Rosso” blend

 

Caffè espresso “Doge Rosso” is a blend composed of 100% Arabica beans from Brasil, Colombia, Guatemala and India. Each cultivar is roasted separately, and is then “cold-blended” as dictated by the Venetian tradition. Each origin is able to be traced back to the specific plantation or cooperative where the beans were grown. Therefore each type of bean in our blend is named specifically after the farm or producer who grew them thereby giving us the exclusive importation for the Italian market with a no-nonsense guarantee of authenticity and quality.

The tradition of Venetian espresso

Reintroduction of traditional antique Venetian flavor comprised of simplicity, grand aromas and low acidity. The only modification to the original blend was in substituting Haitian beans with Indian beans raising the yield and emphasizing sweetness.

Once brewed all of the aromas and perfumes of each single cultivar is accentuated thanks to the classic Venetian cold-blending method.

“Doge Nero” blend


Caffè espresso “Doge Nero” is a blend composed of only two cultivars - washed Arabica beans from the Crystal Mountain region in Cuba, and washed Robusta beans from the Taneerullah plantation in Karnataka, India. Both cultivars are exclusively imported by Caffè del Doge. They are roasted together to obtain a uniform aroma and to incorporate their opposite qualities forming a perfect blend. The research for the composition of “Doge Nero” took the following two fundamental aspects into consideration:

Ease of use by brewer
To obtain an easy to use blend, we selected a particular Arabica variety which is characterized by its low oxidation for medium and long storage periods and a Robusta variety washed at the plantation, a rarity in the world of coffee.

Search for an intense dark chocolate aftertaste
Use of a Robusta variety characterized by aromatic qualities particularly fitting and without defects highlights the notable cocoa aftertaste possessed by the Cuban Arabica counterpart selected.

Once brewed this blend expresses a grand personality which is both intense and persistent without any bitter tones.
